The paleta

Cinco Jotas cures acorn-fed 100% Ibérico pigs raised free-range in the dehesas of Jabugo, in southwest Spain. The paleta is the front leg: smaller than a full jamón, more concentrated in flavour, and shot through with the soft intramuscular fat that only an acorn diet produces. It arrives whole and bone-in, sealed with the Cinco Jotas medallion and braided cord.

The holder

A Cuenca-style jamonero in wood and steel. It grips the leg firmly at both ends so you can run the knife along the grain and take thin, even slices without the piece shifting under the blade.

Carving and keeping it

Slice thin — almost translucent — and let the pieces sit a few minutes at room temperature before serving, so the fat softens and the aroma opens up. Between sessions, lay the trimmed fat back over the cut face and cover it with a clean cloth. That single habit is what keeps a paleta from drying out.
