Cheese
Cheese is the cheapest thing in this shop per ounce. A four-cheese Spanish board is $1.25 an ounce; a 6.6 lb extra-aged Manchego DOP wheel is $1.88. For comparison, hand-carved Ibérico ham runs $21.33. If you want to put something generous on a table without spending $500, this is the page.

Which Spanish cheese should you start with?
Manchego is sheep’s milk from La Mancha: firm, nutty, and the one that sits next to jamón without arguing with it. Mahón is cow’s milk from Menorca, saltier and sharper at the edges. Idiazábal is smoked sheep’s milk from the Basque Country, the loudest of the three. If you cannot choose, buy the four-cheese board: it is 2 lb for $39.99 and contains all three plus a goat cheese.
Why a wheel sometimes disappears
Cheese is the one category we sell against what is physically in the case, not against a forecast. When a wheel is cut out, it stays unavailable until the next one lands — so if a size is showing as sold out, that is literal rather than a display error. For what to pair it with, Spanish food gifts prices every box by the ounce, and the Ibérico buying guide covers the ham half of the board.
