Description

What you're actually buying

In the box two whole sausages, 1 lb each
Total weight 2 lb, or 32 oz
Cost per ounce $2.88
Equipment needed none — a kitchen knife

Both sausages are acorn-fed 100% Ibérico, whole and uncut. Prices verified 22 October 2026.

Acorn-fed salchichón and acorn-fed chorizo, both whole, both 100% Ibérico

Two 1 lb cured sausages from acorn-fed, free-range 100% Ibérico pigs. The chorizo is the paprika one — pimentón is what makes a chorizo a chorizo. The salchichón is the peppercorn one, blended with black peppercorns instead. They are the two halves of a Spanish board, and this box is both of them.

At $92 for 2 lb, this is $2.88 an ounce

That is the number worth carrying around, because the acorn-fed pieces in this shop sit at very different prices per ounce — and two of them are these same two sausages, sold one at a time.

Acorn-fed (bellota) format Price Weight Per ounce
Salchichón de bellota, whole 1 lb $42.95 16 oz $2.68
This box — both sausages, whole $92 32 oz $2.88
Chorizo de bellota, whole 1 lb $49.99 16 oz $3.12
Coppa de bellota, whole piece $169 approx. 2.5 lb approx. $4.23*
USDA Organic bellota chorizo, 7 oz $39 7 oz $5.57

*The coppa is sold by the piece at an approximate weight, so its cost per ounce moves with the piece you receive.

The honest reading of that table

This box is not a discount, and we would rather you heard it here. Bought separately the two sausages come to $92.94 — so the box saves you 94 cents, which is two cents an ounce. What it buys is the pairing in one box, not a price break. If you only want one of the two, buy that one: the salchichón on its own is the cheapest acorn-fed ounce in the table above.

Whole sausage against the sliced packs

This is where the format actually costs money. The same two Ibérico sausages are also sold pre-sliced in 2 oz packs, and sold whole in a smaller 7 oz size.

Format Price Per ounce
Salchichón Ibérico, whole 7 oz $18.99 $2.71
Chorizo Ibérico, whole 7 oz $19.99 $2.86
This box, whole, acorn-fed $92 $2.88
Salchichón Ibérico, sliced 2 oz × 4 $34.99 $4.37
Chorizo Ibérico, sliced 2 oz × 4 $67 $8.38

Sliced, the salchichón costs about 1.5 times this box's ounce and the chorizo about 2.9 times. Two things keep that from being a clean win, and both belong here. First, those packs arrive cut and portioned, and you can open one and leave the rest sealed — that is worth something on a Tuesday. Second, the two 7 oz whole sausages are cheaper per ounce than this box, and they are Ibérico, but their labels do not state acorn-fed, so the grade is not the same thing you are buying here. Format moves the price more than grade does, and is a whole jamón cheaper than sliced? is where we test that claim on the legs.

What it asks of you, and what it does not

Nothing, more or less. A whole bone-in jamón cannot be opened without a stand and a long jamonero blade, which in this shop come to $88 before the first slice. A sausage needs a sharp kitchen knife and a board. Slice thin and across, and cut only what you will eat — the cut face dries, so wrap what is left.

How to know it's the real thing

Spanish law (Real Decreto 4/2014) grades every Ibérico product by breed and feed, and marks it with one of four colours:

  • Black — bellota 100% ibérico: pure Iberian breed, acorn-fed, free-range
  • Red — bellota ibérico: crossed breed, acorn-fed, free-range
  • Green — cebo de campo: free-range, fed on grass and grain
  • White — cebo: grain-fed, raised indoors

Both sausages in this box are black-seal: 100% Ibérico breed, acorn-fed. On a whole leg that grade is stamped on the hoof; on a sausage there is no hoof, so it travels on the pack label instead — how to read the seal is where to check a marking you are unsure about, and bellota vs cebo de campo vs Serrano puts a price on the difference between the grades.

If you want the next step up

The coppa de bellota is the same grade and the same no-equipment format, but a bigger single piece of whole muscle rather than a cured sausage — approximately 2.5 lb at $169, which is about $4.23 an ounce. It is the one to reach for if what you want is one larger piece instead of two sausages. The rest of the cured range is in charcuterie.

For a kitchen, and for picking it up in Miami

At $2.88 an ounce, a 2 oz portion is $5.76 of product. We do not publish which pieces are on the counter on a given day, so call 786 400 8379 and ask before you drive over. The counter is at 1400 20th Street, Miami Beach, FL 33139 · info@barcelonetamarket.com. How pickup works is on Spanish ham in Miami, and jamón ibérico for restaurants is where a kitchen can cost this out by the plate.
