Fermín bite-size assortments, 1 oz a pack
Three combinations, each one a pair or a trio of 1 oz packs. They are made for a board, a picnic or a plate of something before dinner — and for the question that comes before a whole piece, which is whether you like it.
The three combinations, and what each works out to per ounce
| Combination | Packs | Price | Per ounce |
|---|---|---|---|
| Serrano ham + Serrano loin | 2 × 1 oz | $14.99 | $7.50 |
| Ibérico ham + Ibérico loin | 2 × 1 oz | $16.99 | $8.50 |
| Ibérico chorizo + salchichón + loin | 3 × 1 oz | $19.99 | $6.66 |
These are dear ounces and we would rather say so than let you find out later: of everything in this shop that declares a weight, only the ready-to-plate bellota ham packs cost more, at $20.00 and $21.33 an ounce. What you are buying at this size is not value by weight — it is the answer to a question, for $15 to $20 instead of several hundred.
What the same thing costs once you stop tasting
If one of these settles it for you, this is where the price per ounce goes next. Same shop, same producers, every figure the shelf price divided by the weight the piece declares.

|---|---|---|---|
| the Serrano |
Serrano jamón, whole bone-in, 16–18 lb about 131 servings of 1 oz · needs a stand and a knife |
$499 | $3.81 |
| the Ibérico ham |
Fermín paleta de bellota, whole bone-in, 10–14 lb about 73 servings of 1 oz · black seal · needs a stand and a knife |
$559 | $7.66 |
| the Ibérico ham, but no carving |
Fermín ham de bellota, sliced, 2 oz × 4 packs 8 oz · vacuum sealed, ready to plate |
$160 | $20.00 |
| the chorizo |
Chorizo Ibérico, whole 7 oz a kitchen knife is all it needs |
$19.99 | $2.86 |
| the salchichón |
Salchichón Ibérico, whole 7 oz the black-peppercorn one |
$18.99 | $2.71 |
The sausages are the short step: $6.66 an ounce here against $2.71 for a whole 7 oz salchichón, and the whole one needs nothing but a kitchen knife. The ham is the long one, because a whole leg also needs a stand and a blade — $88 in this shop, bought once, which across the Serrano's 131 servings is about $0.67 a serving.
Putting them on a board
A Spanish board is ham, cured sausage and cheese, and the three families cost very different amounts by the ounce — cheese from $1.25, ham up to $21.33. What goes on a Spanish charcuterie board, and what it costs a head prices the whole thing per person, and works out what a board for six comes to three different ways.
If what you want is a board without assembling it, A Little Bit Of Spain is $129 and itemises 51.95 oz of ham, sausage, three cheeses, olives, Marcona almonds and quince paste — $2.48 an ounce as weighed.
