What you're actually buying

Blade 295 mm, Teflon-coated
Also in the box Knife sharpener
What it is for Carving a whole jamón or paleta
Stand included? No — knife and sharpener only

This is the same knife that comes inside the Ultimate Carving Set.

295 mm of blade, because a jamón is not cut — it is sliced along the muscle.

A kitchen knife is short, thick and ground to push through things. Carving a cured ham is the opposite job: the blade travels the length of the muscle in one long, shallow pass and comes away with a slice thin enough to read through. That takes length and a narrow profile, which is what the 295 mm blade gives you. The Teflon coating keeps the slice from clinging to the steel as it comes off, so it lands on the plate in one piece instead of folding onto itself.

And the sharpener in the box is not a throw-in. A whole piece is not carved in one sitting — it stays on the stand for weeks and gets opened again and again. Edge maintenance is part of owning a ham, not a one-off before the first cut.

The two things a whole ham needs that do not come with it

Every whole bone-in piece we sell arrives as a ham and nothing else. The knife is half of what turns it into something you can serve; the stand is the other half.

This knife — 295 mm, with sharpener
Teflon blade
$39
Holder Ham — Cuenca
natural wood, made in Spain — the stand that holds the piece still
$49
The pair $88

$88, once. Both items outlast the ham they were bought for. Our comparison of whole pieces against sliced packs charges the whole $88 to the first piece anyway, and five of the six whole pieces still work out cheaper per ounce than any sliced pack — see is a whole jamón cheaper than sliced? for the arithmetic. Do I need this if my piece is boneless?

You do not need the stand — a deboned block carves on a cutting board, which is the main practical reason people choose boneless. The knife is a different matter: the slice still has to come off long and thin, and a short blade cannot do that on a block either. If you bought a boneless piece, buy the knife and skip the jamonera.

If you have not bought the ham yet

Buying the knife on its own makes sense if you already own a piece, or a stand. If you own neither, the bundle costs less than the same three items bought one at a time:

Ultimate Ibérico Carving Set
Fermín paleta de cebo de campo 10–12 lb + Cuenca stand + this knife
the three bought separately: $490 + $49 + $39 = $578
$499
Premium Holder Ham — Segovia
the stand with a premium rotational system, if you would rather turn the piece than unclamp it
$190

That first row is a $79 difference, and both numbers are standing catalogue prices you can check on the pages linked above. No code, no promotion.
