50% Ibérico grain-fed boneless ham | Jamón de cebo de campo sin hueso

Made from free-range 50% Ibérico pigs — a 100% Ibérico mother and a 100% Duroc father — raised on a grass and grain based diet and cured for 36 months.

Boneless means no stand, no carving technique and no waste to work around: slice it with a sharp knife or an electric slicer, and keep it wrapped and refrigerated between sessions.

Spanish labelling rules under the Ibérico Quality Norm require Ibérico products to state breed and feed percentages, which is why this piece is labelled 50% Ibérico, cebo de campo.

How to know it's the real thing

Spanish law (Real Decreto 4/2014) grades every Ibérico piece by breed and feed, and marks it with one of four colours:

  • Black — bellota 100% ibérico: pure Iberian breed, acorn-fed, free-range
  • Red — bellota ibérico: crossed breed, acorn-fed, free-range
  • Green — cebo de campo: free-range, fed on grass and grain
  • White — cebo: grain-fed, raised indoors

This is a green-seal piece: 50% Ibérico breed, raised outdoors in the dehesa on grass and grain. Because it is boneless, the grade travels on the pack label rather than on a hoof seal.
