Ultimate Iberico Ham Carving Set - Premium Shoulder Ham (PALETA), Cuenca Knife, and Carving Knife Set
What you're actually buying
| The ham | Fermin Paleta de Cebo de Campo, 10-12 lb, bone-in |
| The stand | Cuenca ham holder, natural wood |
| The blade | Professional carving knife, 295 mm Teflon blade, with sharpener |
| Servings of 1 oz | about 67 |
| Cost per serving | about $7.30 |
Servings are an estimate based on typical edible yield once bone, rind and outer fat are removed. Figures taken from the paleta's own product page.
A whole Iberico paleta, the stand to hold it and the knife to cut it — in one order.
This is the set for someone who has decided to keep a whole piece on the counter and does not yet own the equipment. A bone-in paleta cannot be carved on a cutting board: it needs a stand that grips the trotter and a long, flexible blade that follows the bone. Buy the ham on its own and the first evening ends with a leg you cannot open.

Which seal is in this set, and the honest comparison
The paleta in this set carries the green seal: cebo de campo, an Iberico pig raised outdoors on grass and grain rather than acorns. Not bellota, and priced accordingly. Two things are worth knowing before you choose it.
|
This set — paleta de cebo de campo, green seal 10-12 lb · about 67 servings · about $7.30 each · stand and knife included |
$499 |
|
Fermin paleta de bellota, black seal 10-14 lb · about 73 servings · about $7.25 each · ham only, no equipment |
$529 |
Read that second row twice, because the price tags suggest the wrong order: the black-seal acorn-fed paleta costs slightly less per serving than the green-seal one in this set — about $7.25 against about $7.30. So the choice here is not really about grade. It is about whether you need the stand and the knife. If you already own them, buy the bellota paleta on its own. If you do not, this set puts a whole piece, a stand and a blade on your counter for $30 more than that ham by itself.
If it has to be Cinco Jotas, buy the piece on its own
The ham in this set is Fermin. Cinco Jotas is not sold here bundled with a stand and a knife — its bone-in paleta is sold on its own, and plenty of people start there instead. The arithmetic is worth seeing before you decide, because it does not favour the more expensive piece:
|
This set — Fermin paleta de cebo de campo + stand + knife 10-12 lb · about 67 servings · about $7.30 each, equipment included |
$499 |
|
Cinco Jotas bone-in paleta de bellota, black seal 8-11 lb · about 58 servings · about $11.40 each · ham only, no equipment |
$659 |
| Cinco Jotas paleta plus the stand and the knife it also needs $659 + $88 ÷ 58 servings |
$747 about $12.88 each |
Per bite, this set is the cheaper way in, and not by a little: about $7.30 a serving against about $12.88. It is also a bone-in piece, so it needs exactly the same stand and the same blade — which this set already includes, and which outlive the ham.
What the $659 buys is not more meat. It is Cinco Jotas and the black seal: acorn-fed 100% Iberico, the highest of the four Spanish grades, against the green seal in this set. That is a decision about grade, and nobody should talk you out of it with a cost-per-serving table. If that is the piece you want, buy it on its own and add the stand and the knife once — your second piece, whatever grade, costs only the meat.
If you want a different stand, or a bigger piece

Never carved one before? How to carve a whole jamon covers the first cut, which way the piece faces and how to keep the cut face covered between sessions. Shoulder or back leg? Jamon or paleta: which should you buy? puts nine pieces side by side with their servings and cost per bite. Still deciding between a whole piece and sliced packs? Is a whole jamon cheaper than sliced? does that arithmetic with the equipment cost included, and how much jamon do I need prices a party by guest count. For the grades, bellota vs cebo de campo vs serrano puts six whole pieces side by side, and reading the seal shows how to check a piece is what the label claims.
