Whole Jamón 100% Ibérico de Bellota by COVAP — the iconic “Pata Negra”

Alta Expresión bone-in acorn-fed 100% Ibérico ham. Juicy meat marbled with fat, in deep red and pink tones against the sheen of the lean, with an unusual combination of sweet and savoury notes — acorns, honey, damp earth and truffle — that build into an intense, persistent flavour.

This piece has been through a long, traditional ageing process in COVAP's own natural drying houses for a minimum of 36 months, supervised by their master ham-makers. It has won the Superior Taste Award three years running.

The most valued piece, selected for its racial purity and balance. The slow production, the resting in the natural cellar, the vintage of the piece — and then the time you should give it at the table, which is part of the ritual.

To taste it is to taste the pasture: grass, fresh air, and above all acorns, the main element of the free-range Ibérico diet that gives this ham its texture and flavour.

How to know it's the real thing

Spanish law (Real Decreto 4/2014) requires every Ibérico leg to carry a coloured seal on the hoof declaring breed and feed. Four colours, no ambiguity:

  • Black — bellota 100% ibérico: pure Iberian breed, acorn-fed, free-range
  • Red — bellota ibérico: crossed breed, acorn-fed, free-range
  • Green — cebo de campo: free-range, fed on grass and grain
  • White — cebo: grain-fed, raised indoors

This piece carries the black seal, the highest of the four grades. The seal stays on the leg — check it yourself before the first cut.
